What you might not know about Mallorca, especially if you haven't moved inland from the coastal resorts is that there are a variety of charming underground old wine cellars which have been converted into cosy restaurants. These are called Cellers, and if you want to sample some real Mallorcan traditional dishes and wines, then these are the venues to head for.
Inca, land of all things industrial, has a few little hidden gems. Dig deeper, underground actually and you'll discover quite a few old wine cellars, now converted into charming restaurants in Inca. Check out Celler Can Amer, C/Pau 39, Tel: 971 50 12 61. For meeting the locals, try Cafe Espanol on C/Major or for snacks look in on C'an Guize, CL Estrell 3-5 - good pasteries here.
Like Inca, Sineu has some fabulous restaurants, bars and cafes, many of which are based in old wine cellars. Find cafe heaven in Sineu, with it's choice of great lounging cafes to choose from.
Check out Café Es Baret, C/Es Mirador 3, tel: 677 430492, closed on Tuesdays. This serves great tapas in quite a posh setting.
For a real taste of Mallorca, check out Celler Es Grop, C/Major 18, Tel: 971 52 01 87, closed for dinner Mondays and Sundays. Here in this idyllic bodega expect superb old wines and lots of fried dishes.
For something really atmospheric chooe Moli d'En Pau on Ctra. Santa Margarita 25, Tel: 971 85 51 16, closed Mondays. Here again you'll find traditional Mallorcan food, all local produce.

In a small village called Maria de la Salut near Sineu is a renowned artisanal sausage and cured meat makers, which is open to the public for tours, with tasty samples at the end of the tour.
They make quite a few delicacies here including sobrasada, llonganissa and botifarra sin sangre which is without blood - gulp. Only the highest quality of port is used, shipped in from Girona and there's nothing artificial in this stuff, only Vitamin A which serves as an antioxidant. It's well worth a visit this - perhaps not for the vegetarian though.
Algaida and Randa are superb locations for fine Mallorcan dining and Mallorcan wine. There are many cellars, and people visiting local sanctuaries around Llucmajor often frequent them, as do many Palma residents. Check out the 17th century convent Es Eco de Randa Hotel & Restaurant on C/Font 13, in Randa. This is a superb dining venue with terraces and beautiful gardens and a large dining room. In winter they have roaring open fires going and oil lamps. Expect traditional Majorcan fare here, with suckling pig and so forth.
For bargain cellar restaurants, choose Celler Bar Rand on C/Esglesia 20 in Randa, tel: 971 66 09 89/closed Wed. There's a nice cosy atmosphere here, and you can sample some of the famous Mallorcan snails.
In Algaida sample the delights of Cal Dimoni on Ctra Palma-Manacor, tel: 971 66 50 35, closed on Wednesdays. This is more of a traditional restaurant.
Or, for a real treat, hit the Apartaments Rurals Raims on C/Ribera 24, Tel: 971 66 51 57. It's a 17th century manor house with an idyllic swimming pool, and delightful surroundings, and bonus there's a bodega on site. Oliver Moragues wine is made here and you can lounge about this superb setting sampling it! (chekc the web link to the right)
